Ingredients
8 oz fusilli bucati corti pasta
1 bunch curly kale, stems removed and chopped
1 can (15 oz) chickpeas, drained and patted dry
2 tbsp olive oil
1 tsp smoked paprika
1/2 cup raw cashews (soaked for 2 hours)
2 tbsp nutritional yeast
2 tbsp lemon juice
1 tbsp capers
1 clove garlic
Salt and black pepper to taste
Instructions
Preheat oven to 400°F (200°C).
Toss dried chickpeas with olive oil and smoked paprika on a baking sheet; roast for 35-40 minutes until crispy.
Bring a pot of salted water to a boil and cook pasta according to package instructions until al dente; drain and cool.
Massage chopped kale with a pinch of salt until soft and vibrant in color.
Blend soaked cashews, nutritional yeast, lemon juice, capers, garlic, and 1/4 cup water until smooth to create the dressing.
In a large bowl, combine cooled pasta, massaged kale, and roasted chickpeas.
Toss the pasta mixture thoroughly with the prepared Caesar dressing.
Notes
