Tender chicken breasts smothered in a zesty, cheese-infused sour cream sauce with green chiles and taco spices, baked to perfection in a single pan for a high-protein, flavor-packed weeknight meal.
Ingredients
4 boneless, skinless chicken breasts
1 cup full-fat sour cream
1 cup shredded cheddar cheese
1 can (15 oz) mild green chiles, drained
2 tbsp taco seasoning (no pork)
1 tbsp olive oil
1 tsp cumin
1 lime, juiced
1/4 tsp smoked paprika
Salt and pepper to taste
Instructions
Preheat oven to 400°F (200°C)
Sauté diced onion and garlic in olive oil until softened
Mix sour cream, taco seasoning, lime juice, cumin, paprika, and salt in a mixing bowl
Add drained green chiles and shredded cheese to the sauce
Place chicken breasts in a baking dish and pour sauce over them
Bake for 25-35 minutes until chicken reaches 165°F (74°C)
Let rest 5 minutes before serving
Notes
Use a glass or ceramic baking dish to prevent curdling
For extra flavor, add corn tortillas as a topping
Serve with cilantro-lime rice or steamed greens
Double the seasoning if using mild-tasting green chiles
