Ingredients

1 lb sirloin steak, cut into 1-inch cubes
1 package (18 oz) cheese-filled tortellini
4 tbsp unsalted butter
3 cloves garlic, minced
1 tbsp fresh parsley, chopped
1 tbsp fresh chives, chopped
1 tsp Dijon mustard
1/2 tsp smoked paprika
1/2 cup heavy cream
1/4 cup Parmesan cheese, freshly grated
Salt and black pepper to taste
1 tbsp olive oil


Instructions

Bring a large pot of salted water to a boil and cook tortellini according to package instructions, then drain and set aside.
Pat steak cubes dry with paper towels and season generously with salt and pepper.
Heat olive oil in a large skillet over high heat and sear steak bites until a dark crust forms, about 2-3 minutes per side. Remove steak from skillet and set aside.
