This hearty, rustic dish features spicy, smoky beef chorizo sautéed to perfection, combined with tender potatoes in a velvety, rich broth. Perfectly balanced for those who love bold flavors and creamy textures, this soup is a wonderful weeknight dinner that is both filling and deeply satisfying. It is a foolproof recipe that elevates simple pantry staples into a nourishing, restaurant-quality masterpiece that the whole family will enjoy.

Ingredients

1 lb beef chorizo (casing removed)
4 cups gold potatoes, peeled and cubed
1 small yellow onion, diced
3 cloves garlic, minced
4 cups beef stock (halal-certified)
1 cup heavy cream
1 tablespoon olive oil
1 teaspoon smoked paprika
Salt and black pepper to taste
Fresh cilantro for garnish

Instructions

Heat olive oil in a large pot over medium-high heat.
Add the beef chorizo and cook until browned and crumbling, ensuring the oils are released.
Remove half of the chorizo with a slotted spoon and set aside.
Add diced onions to the pot with the remaining chorizo and cook until translucent.
Add the minced garlic and cook for 1 minute until fragrant.
Add the cubed potatoes and beef stock to the pot and bring to a boil.
Reduce heat and simmer for 20 minutes until potatoes are fork-tender.
Use an immersion blender to partially blend the soup to create a creamy texture while leaving some potato chunks intact.
Stir in the heavy cream and smoked paprika until well combined.
Return the reserved chorizo to the pot and heat through for another 5 minutes.
Season with salt and pepper to taste and serve warm with cilantro garnish.

Notes

For an even richer flavor, you can roast the potatoes before adding them to the soup. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop to maintain the creamy consistency.
