Ingredients

1 tbsp olive oil
12 oz halal-certified chicken andouille sausage, sliced
1 large yellow onion, diced
2 stalks celery, diced
1 bell pepper, diced
4 cloves garlic, minced
2 lbs russet potatoes, peeled and cubed
4 cups chicken stock, low sodium
1 tbsp Cajun seasoning
1 tsp smoked paprika
1/2 tsp cayenne pepper
1 cup heavy cream
Salt and black pepper to taste
Fresh parsley for garnish


Instructions

Heat olive oil in a large pot over medium-high heat and sear the chicken andouille sausage until browned, then remove and set aside.
In the same pot, add onions, celery, and bell pepper, sautéing until softened and aromatic.
Stir in the minced garlic and cook for 1 minute until fragrant.
Add the cubed potatoes and toss to coat with the vegetable mixture.
Pour in the chicken stock and add the Cajun seasoning, smoked paprika, and cayenne pepper.
Bring the soup to a boil, then reduce heat and simmer for 20 minutes or until potatoes are fork-tender.
Stir in the heavy cream and the seared sausage, cooking for another 5 minutes to combine flavours.
Adjust seasoning if needed, garnish with fresh parsley, and serve hot.

Notes

For an extra creamy texture, mash a few of the potato cubes directly against the side of the pot.
Store leftovers in an airtight container for up to 3 days in the refrigerator.
If adding thicker texture, stir in a cornstarch slurry briefly before turning off the heat.
