1/2 cup powdered sugar

1 cup unsweetened shredded coconut, for coating


Instructions

Preheat oven to 350°F (175°C)
Whisk flour, baking powder, and salt in a bowl
Cream butter and granulated sugar until light and fluffy
Add eggs one at a time, mixing well after each
Add 2 teaspoons vanilla and 2 teaspoons coconut extract
Alternate adding dry ingredients and coconut milk to the butter mixture
Fold in remaining coconut extract
Divide batter between prepared pans and bake 35 minutes
Let cool completely
Mix cream cheese, powdered sugar, and salt until smooth
Frost cooled cake with cream cheese frosting
Sprinkle shredded coconut evenly over the top
