Ingredients
1/2 cup unsalted butter
4 ounces semi-sweet chocolate
2 large eggs
2 large egg yolks
1/4 cup fine granulated sugar
2 tablespoons all-purpose flour
Instructions
Preheat oven to 425°F (220°C)
Butter and flour 2 ramekins thoroughly to ensure easy release
Melt butter in ramekins in oven for 1 minute
Sprinkle 1 tablespoon sugar in each ramekin
Add 2 ounces chocolate to each ramekin and let melt until smooth
Whisk 2 whole eggs with 2 egg yolks and remaining 1 tablespoon sugar until light and fluffy
Gently fold in melted chocolate mixture
Incorporate flour until just combined
Divide batter evenly between prepared ramekins
Sprinkle raw sugar crystals on top (optional)
Bake for 13-14 minutes until center still jiggles slightly
Let cool 5 minutes (if serving immediately)
Dust with powdered sugar and serve with a spoon to capture the lava center
Notes
Use European-style butter for higher fat content
Room temperature eggs emulsify better
Do not overmix after adding flour to maintain air
Serve directly from ramekins if waiting longer for thicker lava effect
Can be made gluten-free by substituting regular flour
For vegan version, use 1/3 cup neutral oil and cocoa powder instead of butter and chocolate melt
