Ingredients
2 telera or bolillo rolls
1 pound chicken breast or thighs
1 tablespoon chipotle in adobo (or 1 teaspoon smoked paprika + pinch cayenne)
1/2 cup refried beans
1/4 cup pickled jalapeños
2 tablespoons olive oil
1 clove garlic, minced
1 tablespoon lime juice
1 teaspoon ground cumin
Pinch of chipotle or guajillo chili flakes
2 tablespoons queso fresco or feta
1/2 avocado
1 teaspoon crema or sour cream
1 teaspoon mayonnaise
Pinch of salt
Instructions
Preheat oven to 200°F (95°C)
Cut chicken into 1/2″ thick slices
Mix chipotle, garlic, lime juice, cumin, chili flakes, and 1 tsp oil in a bowl
Marinate chicken for 35 minutes
Heat 1 tbsp oil in a skillet; cook chicken 5-7 minutes until browned
Toasting: Brush rolls with remaining oil; toast evenly in oven
Spread refried beans inside rolls
Layer chicken, jalapeños, avocado, queso, crema, and mayonnaise
Close sandwiches and serve immediately

Use halal-approved chicken
For non-crusty bread substitute French rolls
Toasted rolls prevent sogginess
