Description

A hearty, family-friendly meal combining seasoned ground beef, pre-cooked rice, black beans, corn, and melted cheese in one skillet. Perfect for a fast and satisfying dinner.


Ingredients

1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
1 pound ground beef (halal)
1 teaspoon ground cumin
1 teaspoon chili powder
1 cup pre-cooked rice
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) whole kernel corn, drained
1 1/2 cups shredded Colby Jack cheese
1/4 cup salsa or diced tomatoes
1/4 teaspoon salt
1/4 teaspoon black pepper
Fresh cilantro for garnish (optional)


Instructions

Heat olive oil in a large oven-safe skillet over medium heat.
Add onion and garlic; sauté until softened, about 3–4 minutes.
Add ground beef and cook until browned and no longer pink.
Stir in cumin and chili powder; cook for 1–2 minutes until fragrant.
Add pre-cooked rice, black beans, corn, salsa, salt, and pepper.
Stir well to combine and cook for 5 minutes.
Top with shredded cheese and transfer skillet to a preheated oven at 375°F (190°C) for 5–10 minutes, until the cheese is melted and bubbly.
Let sit for a few minutes before serving.
Garnish with fresh cilantro, if desired.

Notes

Use halal ground beef to meet dietary restrictions.
Pre-cooked rice like Minute Rice is ideal for quick meals.
For a vegetarian option, substitute beef with seasoned lentils or mushrooms.
