Ingredients
Garlic Cloves, 1 1/2 Cups
Olive Oil, 1 Cup
Unsalted Butter, 1/2 Cup
Fresh Mozzarella Cheese, 8 Ounces
Freshly Grated Parmesan Cheese, 1 Cup
Fresh Herbs (rosemary, thyme), 1 Teaspoon each
Italian Bread Loaf, 1 large loaf
Instructions
Preheat oven to 275°F (135°C)
Place garlic cloves in a small baking dish and pour olive oil over them
Roast garlic for 90 minutes, until golden and softened
Remove dish and let cool slightly; mash garlic cloves into a paste using a fork
In a bowl, mix garlic paste with unsalted butter, fresh herbs, and salt/pepper
Halve the bread loaf and place on a large baking sheet
Evenly spread the garlic butter mixture over the cut sides
Sprinkle mozzarella over the mixture, then parmesan cheese
Return to oven and bake for 15–20 minutes until golden and cheese is bubbling
Let cool slightly before slicing

Use extra virgin olive oil for a richer flavor; substitute with avocado oil if needed
