Ingredients

1 lb ground beef
12 oz rotini pasta
1 cup sweet corn kernels
1 packet dry ranch seasoning mix
8 oz cream cheese, softened
2 cups shredded sharp cheddar cheese
1/2 cup milk
1/2 teaspoon garlic powder
Salt and black pepper to taste


Instructions

Preheat your oven to 375°F (190°C).
Cook the rotini pasta in a large pot of salted boiling water until al dente, about 8-9 minutes; drain and set aside.
While the pasta cooks, brown the ground beef in a large skillet over medium-high heat until fully cooked; drain excess fat.
Stir the cream cheese, milk, and dry ranch seasoning into the skillet with the beef until smooth and creamy.
Fold in the cooked pasta and sweet corn until evenly coated with the ranch sauce.
Transfer the mixture into a 9×13 inch baking dish.
Evenly sprinkle the shredded cheddar cheese over the top of the pasta mixture.
Bake for 15-20 minutes, or until the cheese is melted and bubbling.
Remove from the oven and let rest for 5 minutes before serving.

Notes

Leftovers store beautifully in an airtight container for up to 3 days in the refrigerator. You can add chopped bell peppers or sautéed onions to the beef for extra texture. If the sauce is too thick, add a splash more milk before baking.
