Balsamic vinegar, 2 tablespoons
Extra virgin olive oil, 1 tablespoon
Honey, 1 teaspoon (optional topping)
Instructions
Wash and dry 6 cups of mixed greens, arranging in a large bowl
Slice 2 ripe peaches into wedges (2–3 wedges each)
Add crumbled feta cheese (about 1 cup) over the greens
Top with fresh blueberries in an even layer

Serve immediately or chill for 10–15 minutes to enhance flavor melding
Notes
For non-dairy option, substitute feta with crumbled firm tofu marinated in lemon juice and herbs
Replace walnuts with pumpkin seeds for a nut-free alternative
Use blackberries or nectarines if blueberries/peaches are not available
Dressing can be prepared in advance; store in an airtight container up to 2 days
Leftover salad stores best in a dome lid container for up to 4 hours at room temperature
