Ingredients

1 cup long-grain white rice
2 cups chicken or vegetable broth
1 (15-ounce) can low-sodium black beans, rinsed and drained
12 ounces vegetarian sausage links (halal-approved)
1 small onion, diced
1 bell pepper, diced
1 minced garlic clove
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
Juice of 1 lime
Cilantro (optional, for garnish)

Add onions and bell pepper; sauté 5 minutes
Add garlic, cumin, and smoked paprika; cook 1 more minute

Pour in broth and add rice and black beans
Bring to a boil, then cover and simmer for 22-25 minutes
Remove from heat, let rest 5 minutes, and fluff with a fork
Serve with a squeeze of lime juice and cilantro
