Mini Flour Tortillas
12 tortillas, 6-inch size
Ground Beef
1 pound (453g), 80/20 lean-to-fat ratio
American Cheese
12 slices, or cheddar as alternative
White Onion
1/2 medium, finely diced
Pickles
24 slices
Sweet Relish
1/4 cup
White Vinegar
1 tablespoon
Ketchup
1 tablespoon
Sugar
1 teaspoon
Mustard
1 teaspoon
Garlic Powder
1/2 teaspoon
Onion Powder
1/2 teaspoon
Salt
1 teaspoon
Black Pepper
1/4 teaspoon
Ground Paprika
1/4 teaspoon


Instructions

Heat a cast-iron skillet or heavy stainless steel pan over high heat until smoking.
Press 1/4 cup of ground beef into each tortilla, spreading to edges to form a thin patty.
Sear patties for 1-2 minutes on each side until crispy and browned.
Top each patty with a slice of American cheese and cover pan to melt cheese, 30 seconds.
Flip finished patties to reserved tortillas.
Prepare sauce by combining sweet relish, vinegar, ketchup, sugar, mustard, garlic powder, onion powder, salt, pepper, and paprika. Mix well.
Spread 1 tsp sauce on each half of the taco shell.
Add 3-4 pickle slices per taco.
Sprinkle diced white onion over the patties.
Fry tacos in pan for another minute per side until warmed through.
Serve immediately with additional sauce on the side.

Notes

For best results, work in batches and keep pan hot throughout cooking.
Classic Big Mac sauce is recreated using relish and vinegar base.
Use 6-inch street taco tortillas for optimal flipping.
Cheddar cheese is excellent alternative for sharper flavor.
Rest cooked tacos on paper towels to absorb excess grease.
