Ingredients
1 lbs ground beef
1 small onion, chopped
2 cloves garlic, minced
1 tbsp ground cumin
1 tbsp chili powder
1 tsp salt
1/2 tsp black pepper
2 cups red enchilada sauce (alcohol-free)
6 corn tortillas
2 cups shredded cheddar cheese
Fresh cilantro, chopped (optional garnish)
Lime wedges (optional garnish)
Instructions
Preheat oven to 375°F (190°C)
Heat 1 tbsp oil in a skillet, sauté onion and garlic until softened
Add ground beef, cook until browned and crumbled
