Ingredients
1.5 lbs chicken breasts, butterflied and pounded
1/2 cup whole wheat flour
1 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
2 large eggs, lightly beaten
2 cups panko style breadcrumbs
1/2 cup grated Parmesan cheese
1 cup marinara sauce
1/2 cup shredded mozzarella cheese
Instructions
Preheat oven to 425°F (220°C)
Line baking sheet with parchment paper
Combine flour, garlic powder, salt, and pepper on a plate
Beat eggs in a shallow dish
Place breadcrumbs in a third bowl and stir in Parmesan
Dip chicken in flour mixture, shake off excess, then dip in egg, letting excess drip off
Coat completely in breadcrumb mixture
Transfer to baking sheet and bake 20 minutes
Pour marinara over chicken, top with mozzarella, and bake 12 minutes more until golden
Notes
Use thick-cut chicken breasts for best results
Add fresh basil or oregano to marinara for extra depth
Serve with garlic bread and a green salad
