Description

These decadent apple cheesecake buns combine an enriched, pillowy brioche dough with a tangy cream cheese center and spiced apple compote. Topped with a buttery, golden crumble and finished with a sweet glaze, these pastries offer a sophisticated balance of textures and flavors. Perfect for brunches or indulgent afternoon treats, these bakery-style buns are easier to assemble than they look, providing a rewarding project for any home baker looking to impress with a professional-quality pastry that is entirely alcohol-free.

Ingredients

3 1/2 cups all-purpose flour
1/2 cup warm milk
1/4 cup sugar
1 packet instant yeast
1 egg
1/2 cup softened butter
8 oz cream cheese, softened
1/4 cup granulated sugar
2 apples, peeled and diced
1 tsp cinnamon
1/2 cup flour for crumble
1/4 cup cold butter for crumble
1/4 cup brown sugar for crumble
1/2 cup powdered sugar for glaze
1 tbsp milk for glaze

Instructions

Whisk warm milk, sugar, and yeast; let sit for 5 minutes until frothy.
Mix in flour, egg, and softened butter to form a soft dough, then knead for 8 minutes.
Cover and let the dough rise in a warm place for 60 minutes.
Prepare the apple filling by sautéing diced apples with cinnamon until tender.
Combine softened cream cheese with sugar and set aside.
Divide dough into 9 balls and press a deep well in the center of each.
Fill each well with a spoonful of cream cheese mixture and topped with apple compote.
Combine crumble ingredients until sandy and sprinkle over the top of the buns.
Bake at 375°F for 20-25 minutes until golden brown.
Whisk powdered sugar and milk together and drizzle over cooled buns.

Notes

Ensure the milk is lukewarm, not hot, to avoid killing the yeast. The buns can be stored in an airtight container for up to 3 days at room temperature. For a deeper flavor, add a pinch of nutmeg to the apple compote.
