Description
A creamy, low-carb zucchini noodle chicken alfredo made with tender chicken, fresh zoodles, and a rich homemade alfredo sauce.
Ingredients
2 boneless chicken breasts
2 tbsp olive oil
Salt and pepper to taste
3 medium zucchini (spiralized)
3 garlic cloves, minced
1 tbsp butter
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/4 cup chicken broth
1/2 tsp Italian seasoning
1/2 tsp lemon zest (optional)
Instructions
1. Season chicken with salt and pepper and cook 5–6 minutes per side in olive oil.
2. Spiralize zucchini and pat dry.
3. Sauté garlic in butter, then add chicken broth and heavy cream.
4. Stir in Parmesan and Italian seasoning until thickened.
5. Toss zoodles in sauce for 1–2 minutes.
6. Slice chicken and combine with zoodles before serving.
Notes
Cook zoodles briefly to avoid sogginess.
Swap chicken with shrimp or tofu for variations.
