Description
Tender and juicy yogurt marinated chicken made with Greek yogurt, lemon, garlic, and warm spices. Perfect for salads, meal prep, and healthy lunches.
Ingredients
1 1/2 lbs chicken cutlets
1/2 cup plain full-fat Greek yogurt
1/4 cup olive oil
Juice of 1 lemon
1 tsp lemon zest
5 garlic cloves, minced
1 tbsp honey
1 tbsp fresh parsley, finely chopped
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp paprika
1/4 tsp cayenne pepper
1/2 tsp dried oregano
1/2 tsp dried basil
1/2 tsp onion powder
1/4 tsp cumin
1/4 tsp coriander
Instructions
1. In a bowl, combine yogurt, olive oil, lemon juice, lemon zest, honey, and garlic.
2. Add all spices and mix well.
3. Coat chicken evenly with marinade.
4. Cover and refrigerate at least 1 hour or up to 8 hours.
5. Grill 5-6 minutes per side or bake at 400°F for 20-25 minutes until internal temperature reaches 165°F.
6. Rest 5 minutes before slicing and garnish with parsley.
Notes
Use full-fat yogurt for best results.
Chicken can be stored in refrigerator up to 4 days after cooking.
