Description
A fresh and healthy spinach rice recipe made with basmati rice, baby spinach, dill, lemon, and olive oil. Perfect for a plant-based dinner or flavorful side dish.
Ingredients
3 tbsp olive oil
1 medium onion, diced
4 garlic cloves, minced
1/4 cup dill, chopped
1/4 cup chives, chopped
1 lb baby spinach
1 cup basmati rice
2 cups vegetable broth
3 tbsp plant butter (optional)
2 tbsp dill, chopped
1 tsp lemon zest
2 tbsp lemon juice
Vegan feta for garnish (optional)
Instructions
1. Heat olive oil in a skillet and sauté onion until translucent.
2. Add garlic, dill, and chives and cook briefly.
3. Stir in baby spinach and cook until wilted.
4. Add rinsed basmati rice and vegetable broth.
5. Bring to a boil, reduce heat, cover and simmer 15 minutes.
6. Let rest covered for 5 minutes.
7. Fluff rice and stir in butter, lemon zest, lemon juice, and remaining dill.
8. Garnish with vegan feta and serve.
Notes
Rinse rice thoroughly before cooking.
Add chickpeas for extra protein.
Store leftovers up to 4 days.
