A warm and flavorful spicy red lentil curry made with coconut milk, tomatoes, and bold spices. This healthy vegan dhal is quick, nourishing, and perfect for weeknight meals.
Ingredients
1 cup red lentils
4 tbsp avocado oil
4 cloves garlic
2 inch ginger
2 serrano peppers
1 tsp cumin
1 tsp cayenne
1/2 tsp coriander
2 tsp curry powder
1 tsp garam masala
1 tsp turmeric
1 tsp salt
1 tsp black pepper
1 can coconut milk
1 can crushed tomatoes
1 tbsp lemon juice
1/2 cup cilantro
Instructions
1. Rinse lentils until water runs clear.
2. Heat oil and cook garlic, ginger, and peppers.
3. Add spices and stir.
4. Add tomatoes and lentils.
5. Pour coconut milk and water.
6. Simmer for 20-25 minutes.
7. Add lemon juice and cilantro.
8. Serve warm with rice or naan.
Notes
Adjust spice level to taste.
