Description
A fresh Southwest quinoa salad with black beans, vegetables, and lime dressing. Perfect for healthy meal prep.
Ingredients
1 cup quinoa
1/2 tsp garlic powder
1/4 tsp cumin
1/2 tsp salt
1 3/4 cup water
15 oz black beans
10 oz cherry tomatoes
1 cup corn
1 red bell pepper
1/4 red onion
1 jalapeno
1/2 bunch cilantro
1/4 cup oil
2 tbsp lime juice
1 tsp agave
1/2 tsp salt
Instructions
1. Cook quinoa with spices and water, then cool.
2. Shake dressing ingredients together.
3. Mix quinoa with vegetables.
4. Add dressing and toss well.
5. Serve immediately or chill before serving.
Notes
Store in fridge up to 5 days.
Add avocado before serving for extra flavor.
