A creamy Southern Potato Salad made with russet potatoes, eggs, mustard, and mayonnaise perfect for potlucks and soul food gatherings.
Ingredients
3 lbs russet potatoes
5 hard-boiled eggs
2 celery stalks, diced
5 green onions, sliced
1 1/4 cups mayonnaise
1 tbsp yellow mustard
1/4 cup pickle relish
2 tsp white vinegar
2 tsp sugar
1/2 tsp garlic powder
Salt & pepper to taste
Paprika for garnish
Instructions
1. Peel and cube potatoes, then boil in salted water until fork tender.
2. Drain and cool completely.
3. Chop hard-boiled eggs.
4. Mix mayonnaise, mustard, relish, vinegar, sugar, garlic powder, salt, and pepper.
5. Fold potatoes, eggs, celery, and green onions into dressing.
6. Chill for at least 2 hours.
7. Garnish with paprika and serve.
Notes
Chill for several hours for best flavor.
Avoid overmixing to keep texture intact.
