Description
Creamy Slow Cooker Tuscan Chicken Tortellini with tender shredded chicken, spinach, sun-dried tomatoes, and cheese tortellini in a rich Italian cream sauce.
Ingredients
2 boneless skinless chicken breasts
2 cups chicken broth
1 cup heavy cream
1/2 cup chopped sun-dried tomatoes
2 cups fresh spinach
4 oz cream cheese
1 tsp Italian seasoning
3 garlic cloves, minced
Salt & pepper to taste
12 oz refrigerated cheese tortellini
Parmesan cheese for serving
Instructions
1. Place chicken in slow cooker and pour broth over.
2. Add garlic, Italian seasoning, salt, and pepper.
3. Cook on low 4–5 hours or high 2–3 hours.
4. Shred chicken and return to cooker.
5. Stir in cream cheese, heavy cream, and sun-dried tomatoes.
6. Add tortellini and cook 20–25 minutes on high.
7. Stir in spinach until wilted.
8. Serve with grated Parmesan.
Notes
Use frozen tortellini only with added broth and longer cook time.
For meal prep, store tortellini separately to prevent softening.
