A bright and comforting slow cooker lemon herb chicken and rice dish cooked in 3 hours, tender, flavorful, and perfect for healthy weeknight dinners.
Ingredients
3 boneless skinless chicken breasts
1 cup long-grain white rice
2 cups low-sodium chicken broth
3 tbsp fresh lemon juice
1 tbsp lemon zest
2 tbsp olive oil
1 tbsp butter (optional)
3 garlic cloves, minced
1 tsp dried thyme
1 tsp dried basil
1 tsp dried oregano
1 tsp salt
1/2 tsp pepper
1 cup baby carrots (optional)
1/2 cup peas
2 tbsp fresh parsley
Instructions
1. Season chicken with salt, pepper, and herbs.
2. Optional: Sear chicken in olive oil for extra flavor.
3. Add rice, broth, lemon juice, zest, garlic, and butter to slow cooker.
4. Place chicken on top and add carrots if using.
5. Cook on HIGH for 3 hours.
6. Stir in peas, slice or shred chicken, and fluff rice.
7. Serve warm with parsley.
Notes
Do not substitute brown rice; it will not cook in 3 hours.
Omit butter for a Whole 30 compliant version.
Add 1–2 tbsp broth after cooking if you prefer looser rice.
