Description

A cozy and healthy slow cooker herb chicken and orzo recipe made with whole food ingredients and simple herbs, perfect for easy weeknight dinners.


Ingredients

1.5 lbs boneless skinless chicken breasts

1 cup orzo pasta

3 cups low-sodium chicken broth

2 tbsp olive oil

3 garlic cloves, minced

1 small yellow onion, diced

2 carrots, sliced

2 celery stalks, chopped

2 tbsp lemon juice

1 tsp dried oregano

1 tsp dried thyme

1/2 tsp dried rosemary

1 tsp salt

1/2 tsp black pepper

Fresh parsley for garnish


Instructions

1. Add olive oil, garlic, onion, carrots, and celery to the slow cooker.

2. Place chicken on top and season with herbs, salt, and pepper.

3. Pour in chicken broth and lemon juice.

4. Cook on low for 4–5 hours or high for 2–3 hours.

5. Remove chicken, shred, and return to slow cooker.

6. Stir in orzo and cook on high for 20–30 minutes until tender.

7. Adjust seasoning and garnish with parsley before serving.

Notes

Add orzo at the end to avoid overcooking.

Use low-sodium broth to control salt levels.

Store leftovers up to 4 days in the refrigerator.
