Description
A cozy slow cooker chicken and wild rice soup made with tender chicken, hearty vegetables, wild rice, and a creamy finish. Perfect for cold days and effortless Crockpot cooking.
Ingredients
1.5 lbs boneless chicken breasts
1 cup wild rice
1 cup diced carrots
1 cup diced celery
1 medium onion, chopped
3 garlic cloves, minced
6 cups chicken broth
2 bay leaves
1 tsp dried thyme
Salt & pepper to taste
4 tbsp butter
1/4 cup all-purpose flour
1.5 cups heavy cream or half-and-half
Instructions
1. Layer vegetables and wild rice in slow cooker. Add chicken and broth with seasonings.
2. Cook on low 6–7 hours or high 3–4 hours.
3. Shred chicken and return to soup.
4. Make a roux with butter, flour, and cream.
5. Stir roux into soup until creamy. Adjust seasoning and serve warm.
Notes
Use real wild rice for best texture.
Add broth when reheating as soup thickens.
Add spinach or mushrooms for extra flavor.
