Description
Halloween-style stuffed peppers filled with shredded chicken, rice, cheese, and spices baked to perfection for a festive family meal.
Ingredients
4 orange bell peppers
2 cups cooked rice
2 cups shredded chicken
1 onion, diced
2 cloves garlic, minced
1 cup tomato sauce
1 cup shredded cheese
1 tbsp olive oil
1 tsp smoked paprika
Salt and pepper to taste
Instructions
1. Preheat oven to 190°C (375°F).
2. Slice off pepper tops, remove seeds, and carve small faces.
3. Sauté onion and garlic in olive oil.
4. Mix with rice, chicken, tomato sauce, and spices.
5. Stuff peppers and place upright in baking dish.
6. Cover with foil and bake for 25 minutes.
7. Uncover, top with cheese, and bake 10–15 minutes more.
8. Serve warm and enjoy.
Notes
Use pre-cooked rice for best texture.
Store leftovers up to 3 days in fridge.
Freeze for up to 1 month.
