Description
Healthy sheet pan chicken tacos with chipotle, honey, and fresh pineapple. A quick Mexican-inspired dinner perfect for busy weeknights.
Ingredients
4 boneless skinless chicken thighs
200 g fresh pineapple chunks
2 tbsp chipotle paste
2 tbsp runny honey
1 1/2 tsp tomato puree
2 garlic cloves, minced
1 small shallot, sliced
Juice of 1 lime
1 tsp salt
8 small corn or flour tortillas
1 ripe avocado, sliced
Fresh coriander for garnish
Instructions
1. Preheat oven to 400°F.
2. Mix chipotle paste, honey, tomato puree, garlic, lime juice, and salt.
3. Coat chicken with marinade.
4. Arrange chicken, pineapple, and shallot on sheet pan.
5. Roast 20-25 minutes.
6. Rest and slice chicken.
7. Warm tortillas.
8. Assemble tacos and serve.
Notes
Broil 2 minutes for extra caramelization.
