Description
Healthy sheet pan baked salmon with lemon garlic cream sauce, roasted broccoli and potatoes. A quick 30-minute salmon dinner.
Ingredients
1 lb salmon
2 cups broccoli florets
1 lb small gold potatoes
1 garlic clove
1 shallot
2 sprigs fresh thyme
2 tbsp parsley or basil
Juice of 1 lemon
2 tbsp olive oil
Garlic powder
Salt & pepper
6 tbsp butter
1/2 cup heavy cream
1/2 cup chicken broth
Instructions
1. Preheat oven to 400°F.
2. Roast seasoned potatoes for 15 minutes.
3. Add broccoli and roast 5 minutes.
4. Season salmon and add to pan.
5. Bake 10-12 minutes until flaky.
6. Prepare lemon cream sauce and pour over salmon before serving.
Notes
Do not overcook salmon.
Store leftovers up to 3 days in refrigerator.
