Description
Crispy roasted sweet potato rounds topped with honey, feta, and parsley. A healthy and elegant dinner side dish.
Ingredients
2 large sweet potatoes
2 tbsp olive oil
1 tsp salt
1 tsp smoked paprika
1/2 tsp black pepper
1/4 cup honey
3/4 cup crumbled feta cheese
2 tbsp fresh parsley, chopped
Instructions
1. Preheat oven to 400°F and line baking sheet.
2. Slice sweet potatoes into 1/2-inch rounds.
3. Toss with olive oil, salt, paprika, and pepper.
4. Arrange in single layer and roast 25-30 minutes, flipping halfway.
5. Sprinkle feta on top and return to oven for 3-5 minutes.
6. Drizzle with honey and garnish with parsley before serving.
Notes
For extra crispiness, broil for 2 minutes at the end.
Do not overcrowd the baking sheet.
Goat cheese can be substituted for feta.
