Description
Crispy roasted potatoes with baked feta, honey, lemon, and roasted garlic. A Mediterranean side dish perfect for lamb or vegetarian dinners.
Ingredients
1 large baking potato, cubed
1 block (7 oz / 200 g) feta cheese
1/4 cup fresh basil, chopped
1 head garlic, top sliced
1 lemon (zest and juice)
1 tsp dried oregano
1 tsp dried thyme
1 tbsp honey
2 tbsp olive oil
1 tsp salt
1 tsp black pepper
Instructions
1. Preheat oven to 400°F.
2. Toss potatoes with olive oil, salt, pepper, oregano, and thyme.
3. Place potatoes in baking dish with feta block and garlic head.
4. Drizzle honey and lemon juice over feta.
5. Bake 35-40 minutes until golden.
6. Mash roasted garlic into feta and mix with potatoes.
7. Top with basil and lemon zest before serving.
Notes
Use block feta for best texture.
Serve with lamb, chicken, or Greek salad.
Add cherry tomatoes for extra Mediterranean flavor.
