Description
Soft rhubarb dream bars with a buttery crust and creamy rhubarb custard filling baked in a 9×13 pan.
Ingredients
1 cup all-purpose flour
1/2 cup sugar
1/2 cup butter room temperature
2 large eggs
1 cup sugar
1/4 cup flour
1/4 tsp salt
2 cups diced rhubarb
Instructions
1. Preheat oven to 350°F and grease a 9×13 baking dish.
2. Mix flour and sugar then cut in butter to form crumbs.
3. Press mixture into baking dish and bake 15 minutes.
4. Whisk eggs and sugar in a bowl.
5. Add flour and salt and mix until smooth.
6. Stir in diced rhubarb.
7. Pour filling over baked crust.
8. Bake 40–45 minutes until set.
9. Cool completely before cutting into bars.
Notes
Fresh rhubarb works best for flavor.
Allow bars to cool before slicing for clean squares.
