Description
A creamy quinoa rice pudding made with plant-based milk, maple syrup, and cinnamon. Perfect as a healthy breakfast or dessert.
Ingredients
1/2 cup quinoa
2 cups milk
2 tbsp maple syrup
1 tsp vanilla extract
1/2 tsp cinnamon
Pinch of salt
Instructions
1. Rinse quinoa thoroughly under cold water.
2. Combine quinoa, milk, maple syrup, cinnamon, and salt in a pot.
3. Bring to a boil then reduce heat to simmer.
4. Cook for 20-25 minutes, stirring occasionally.
5. Simmer uncovered for 5 more minutes until thickened.
6. Remove from heat and stir in vanilla.
7. Adjust consistency with extra milk if needed.
8. Serve warm or chilled.
Notes
Toast quinoa before cooking for added flavor.
Store in fridge up to 3 days.
