A moist pineapple carrot cream cake packed with tropical flavor, warm cinnamon, and rich cream cheese frosting. Perfect for Easter and spring baking.
Ingredients
2 cups all-purpose flour
1 tsp baking powder
1 1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
3/4 cup granulated sugar
3/4 cup brown sugar
1 cup vegetable oil
3 large eggs
2 tsp vanilla extract
2 cups grated carrots
1 cup crushed pineapple
1/2 cup walnuts
8 oz cream cheese
1/2 cup unsalted butter
2 cups powdered sugar
1 tbsp pineapple juice
Instructions
1. Preheat oven to 350°F and prepare pans.
2. Whisk dry ingredients.
3. Mix oil and sugars.
4. Add eggs and vanilla.
5. Fold in carrots and pineapple.
6. Combine with dry ingredients.
7. Add walnuts.
8. Bake 30-35 minutes.
9. Cool completely.
10. Prepare frosting and frost cake.
Notes
Do not overmix batter.
Store refrigerated up to 5 days.
