Description
Crispy parmesan crusted chicken made with panko breadcrumbs and baked to golden perfection. Easy, flavorful, and perfect for weeknight dinners.
Ingredients
2 large chicken breasts
1/2 teaspoon garlic powder
Salt & pepper to taste
1/4 cup flour
2 eggs
2/3 cup panko breadcrumbs
1/2 cup freshly grated parmesan cheese
1/2 teaspoon Italian seasoning
3 tablespoons olive oil
Instructions
1. Preheat oven to 400F and position rack in top third.
2. Cut chicken breasts in half lengthwise and season.
3. Prepare three bowls: flour, beaten eggs, breadcrumb mixture.
4. Coat chicken in flour, egg, then breadcrumbs.
5. Heat oil and sear chicken 2-3 minutes per side.
6. Transfer skillet to oven and bake 5 minutes until cooked through.
7. Serve immediately.
Notes
Use freshly grated parmesan for best flavor.
Do not overcrowd the pan when searing.
Chicken is done when internal temp reaches 165F.
