Description
Soft and fluffy pancake mini muffins baked in a muffin pan, perfect for kids and toddlers.
Ingredients
1 ½ cups all-purpose flour
2 tsp baking powder
2 tbsp sugar
¼ tsp salt
1 ¼ cups milk
1 large egg
3 tbsp melted butter
1 tsp vanilla extract
Instructions
1. Preheat oven to 375°F and grease a mini muffin pan.
2. Mix dry ingredients in a bowl.
3. Whisk wet ingredients in a separate bowl.
4. Combine wet and dry ingredients gently.
5. Fill muffin cups ¾ full.
6. Bake for 10–12 minutes.
7. Cool slightly before serving.
Notes
Add fruit or chocolate chips if desired.
Store in refrigerator up to 4 days.
