Description
Soft orange ginger honey cakes made with fresh orange juice, citrus zest, warm spices, and raw honey. Perfect homemade dessert for brunch or family treats.
Ingredients
2 cups all-purpose flour
1 tsp baking soda
1/2 tsp cinnamon
1/4 tsp nutmeg
1 tsp ground ginger
1 tbsp fresh ginger
Pinch salt
Zest of 2 oranges
1 cup fresh orange juice
3/4 cup raw honey
2 eggs
1/2 cup unsalted butter
2 tbsp honey
2 tbsp orange juice
Instructions
1. Preheat oven to 350°F and grease a muffin pan.
2. In a bowl whisk flour, baking soda, cinnamon, nutmeg, ginger and salt.
3. In another bowl mix eggs, honey, melted butter, orange juice, orange zest and fresh ginger.
4. Combine wet ingredients with dry ingredients to form a smooth batter.
5. Fill muffin molds about two thirds full.
6. Bake for 18-22 minutes until golden and cooked through.
7. Mix honey and orange juice to create a glaze.
8. Brush glaze over warm cakes and allow to cool slightly before serving.
Notes
Fresh orange juice gives the best flavor for this recipe.
Extra orange zest can be added for stronger citrus aroma.
Serve with whipped cream or yogurt for brunch desserts.
