Description
A creamy one pan lemon chicken gnocchi recipe with tender chicken, spinach, and parmesan in a rich citrus sauce.
Ingredients
2 large chicken breasts
1/2 teaspoon garlic powder
1 teaspoon lemon pepper seasoning
1 tablespoon olive oil
1 tablespoon butter
2 cloves garlic minced
1/2 cup chicken broth
1 tablespoon lemon juice
1 cup heavy cream
1 pound uncooked potato gnocchi
1/2 cup parmesan cheese
2 cups fresh spinach
Salt & pepper to taste
Instructions
1. Slice chicken into thin cutlets and season.
2. Sear chicken in oil and butter until cooked.
3. Remove chicken and cook garlic.
4. Add broth and lemon juice, scrape pan.
5. Add cream and gnocchi, simmer until thickened.
6. Stir in parmesan and spinach.
7. Return chicken and serve.
Notes
Do not pre-cook gnocchi.
Add extra broth if sauce becomes too thick.
