Description

Ingredients

4 cups riced cauliflower

2 tbsp olive oil

1/2 cup diced onion

3 garlic cloves, minced

1 cup frozen peas and carrots

2 tbsp soy sauce or tamari

1 tsp sesame oil

1/2 tsp black pepper

Salt to taste

2 sliced green onions


Instructions

1. Heat olive oil in a large skillet over medium-high heat.

2. Add onion and cook until soft.

3. Stir in garlic and cook briefly.

4. Add riced cauliflower and spread evenly.

5. Cook undisturbed to allow crisping, then stir.

6. Add peas, carrots, soy sauce, sesame oil, salt, and pepper.

7. Cook until cauliflower is tender and lightly crispy.

8. Top with green onions and serve hot.
