Description

Mediterranean quesadillas filled with spinach, feta, mozzarella, and red onion. A quick and healthy lunch or dinner idea packed with bold flavor.


Ingredients

1 cup fresh spinach

1/4 cup red onion, sliced

1 small tomato, diced

1/2 cup shredded mozzarella cheese

1/2 cup crumbled feta cheese

4 flour tortillas

1 tbsp olive oil

Black pepper to taste


Instructions

1. Heat olive oil in a skillet over medium heat. Add red onion and cook until soft.

2. Add spinach and cook until wilted. Remove from heat and stir in tomato.

3. Place mozzarella and feta on half of each tortilla.

4. Add spinach mixture and fold tortillas in half.

5. Cook 2-3 minutes per side until golden brown and crisp.

6. Slice and serve warm.

Notes

Avoid overfilling the tortillas to keep them crisp.

Serve with tzatziki or hummus for extra Mediterranean flavor.
