Description
A fresh Mediterranean lentil salad made with black lentils, crisp vegetables, herbs, and a bright lemon garlic dressing.
Ingredients
1 cup black or green lentils
1 bay leaf
1 English cucumber
1 red bell pepper
1 orange bell pepper
2 green onions
1/2 cup parsley
1/2 cup mint
2 large lemons
1-2 garlic cloves
1/3 cup olive oil
Salt and black pepper
1/2-1 tsp Urfa Biber
Instructions
1. Cook lentils with bay leaf until tender but firm. Drain and cool.
2. Whisk lemon juice, garlic, salt, pepper, and Urfa Biber. Slowly add olive oil.
3. Chop vegetables and herbs.
4. Combine lentils and vegetables.
5. Pour dressing over salad and toss gently. Let rest 20 minutes before serving.
Notes
Store refrigerated up to 4 days.
Add feta or grilled chicken for extra protein.
