A fresh Mediterranean cucumber tomato salad with onion, herbs, and olive oil, light, colorful, and perfect for summer meals.
Ingredients
2 cups diced cucumber
2 cups chopped tomatoes
1/4 cup finely chopped red onion
2 tbsp chopped chives
2 tbsp chopped parsley
3 tbsp olive oil
1 tbsp lemon juice
Salt to taste
Black pepper to taste
Instructions
1. Dice cucumber and chop tomatoes, allowing excess liquid to drain.
2. Finely chop onion, chives, and parsley.
3. Combine vegetables in a glass bowl.
4. Drizzle with olive oil and lemon juice.
5. Season with salt and pepper and toss gently.
6. Rest for 5 minutes before serving.
Notes
Add bell peppers for extra color.
Chill before serving for a refreshing texture.
