Description

A fresh Mediterranean bean salad made with mixed beans, vegetables, olive oil, lemon juice, and herbs for an easy Mediterranean diet recipe.


Ingredients

1 can cannellini beans, rinsed

1 can garbanzo beans, rinsed

1 can kidney beans, rinsed

1 small cucumber, diced

2 tomatoes, finely chopped

3/4 cup celery, chopped

1/4 cup red onion, finely chopped

1/4 cup fresh basil, chopped

3/4 cup Italian parsley, chopped

1/2 cup Kalamata olives

1/3 cup pepperoncini

1 clove garlic, minced

1/4 cup Parmesan cheese

1/4 cup extra-virgin olive oil

Juice of 1 1/2 lemons

1/2 tsp Italian seasoning

Salt and pepper to taste


Instructions

1. Drain and rinse all beans.

2. Combine beans and vegetables in a large bowl.

3. Whisk olive oil, lemon juice, garlic, seasoning, salt, and pepper.

4. Pour dressing over salad and toss gently.

5. Add Parmesan and mix lightly.

6. Chill before serving.

Notes

Store in an airtight container for up to four days.

Best served chilled or at room temperature.
