Description
Mediterranean baked feta eggs with roasted tomatoes, peppers, spinach, herbs and creamy feta cheese. A simple vegetarian Mediterranean breakfast ready in one pan.
Ingredients
2 cups cherry tomatoes
1 red bell pepper diced
1/2 small red onion diced
3 cloves garlic minced
8 ounces feta cheese
4 tablespoons olive oil
1 teaspoon dried oregano
1 teaspoon sea salt
1/2 teaspoon dried thyme
1/2 teaspoon black pepper
1/2 teaspoon red pepper flakes
1 cup chopped baby spinach
4 large eggs
Optional fresh basil or chives
Instructions
1. Preheat oven to 400°F.
2. Combine tomatoes, bell pepper, onion and garlic in a baking dish.
3. Drizzle olive oil and season with oregano, salt, thyme, pepper and red pepper flakes.
4. Place feta cheese in the center.
5. Bake for 20 minutes until vegetables soften.
6. Stir in spinach.
7. Create four small wells and crack eggs into them.
8. Bake another 5-8 minutes until eggs are cooked.
9. Top with fresh herbs and serve.
Notes
Serve with toasted bread or warm pita.
Use block feta for the best creamy texture.
