Description

Low-carb turkey lasagna roll-ups made with lean ground turkey, marinara, and cheese for a high protein comfort meal.


Ingredients

Scale

1 lb lean ground turkey

34 large zucchini, sliced lengthwise

1 1/2 cups marinara sauce

1 cup ricotta cheese

1 1/2 cups shredded mozzarella

1/4 cup grated parmesan

1 egg

3 garlic cloves, minced

2 tsp Italian seasoning

1 tbsp olive oil

Salt & pepper to taste


Instructions

1. Preheat oven to 375°F.

2. Salt zucchini slices and rest 10 minutes, then pat dry and lightly roast.

3. Cook turkey with olive oil, garlic, seasoning, salt, and pepper.

4. Mix ricotta, egg, parmesan, and half the mozzarella.

5. Assemble roll ups with cheese and turkey filling.

6. Place in baking dish with marinara, top with mozzarella.

7. Bake 25–30 minutes until bubbly.

Notes

Let rest before serving for best structure.
