Description

A hearty low-carb taco casserole made with seasoned beef, cauliflower rice, peppers, and melted cheese, perfect for easy family dinners.


Ingredients

Scale

1 lb ground beef

1 tbsp olive oil

1 small onion, diced

2 garlic cloves, minced

2 tbsp low carb taco seasoning

1 cup diced tomatoes

1 cup diced green bell pepper

2 cups cauliflower rice

1 1/2 cups shredded cheddar cheese

1/2 cup shredded Monterey Jack cheese

1/2 cup sour cream

Salt and pepper to taste

Fresh cilantro for garnish


Instructions

1. Heat olive oil in a skillet and cook onion until soft.

2. Add garlic and ground beef, cooking until browned.

3. Stir in taco seasoning, tomatoes, bell pepper, and cauliflower rice.

4. Remove from heat and mix in sour cream and half the cheese.

5. Transfer to a casserole dish, top with remaining cheese, and bake at 375°F for 20–25 minutes.

Notes

Use freshly shredded cheese for best melting.

Can be prepped ahead and baked later for convenience.
