Ingredients

1 lb ground beef or turkey

4 medium russet potatoes diced

1 can black beans drained

1 cup corn kernels

1 cup cherry tomatoes halved

1 small red onion chopped

1 medium avocado diced

1 cup shredded cheddar cheese

1/4 cup chopped cilantro

1 lime cut into wedges

1 tsp garlic powder

1 tsp onion powder

1 tsp chili powder

1 tsp smoked paprika

1 tsp cumin

Salt and black pepper to taste

2 tbsp olive oil

Sour cream for serving


Instructions

1. Preheat oven to 425°F and roast diced potatoes with olive oil and seasoning for 25–30 minutes until golden.

2. Brown ground beef or turkey in a skillet over medium heat.

3. Add garlic powder, onion powder, chili powder, cumin, paprika, salt, and pepper.

4. Stir in black beans and corn and cook until heated through.

5. Prepare toppings including tomatoes, avocado, red onion, and cilantro.

6. Divide roasted potatoes into bowls.

7. Top with meat mixture, beans, and corn.

8. Add cheddar cheese, sour cream, cilantro, and a squeeze of lime before serving.

Notes

Roast potatoes until crispy for the best texture.

Keep toppings separate when meal prepping for several days.
