Description
Soft and chewy lemon blueberry cookies made with fresh zest and juicy blueberries. Bright citrus flavor with a tender bakery-style texture.
Ingredients
2½ cups all-purpose flour
1 tsp cornstarch
1 tsp baking powder
¼ tsp baking soda
½ tsp salt
1½ cups granulated sugar
Zest of 3 small lemons
1 cup unsalted butter, melted
1 large egg
1 large egg yolk
1 tsp vanilla extract
1 cup fresh blueberries
¼ cup granulated sugar for rolling (optional)
Instructions
1. Rub lemon zest into sugar until fragrant.
2. Whisk melted butter into lemon sugar.
3. Add egg, yolk, and vanilla.
4. Mix dry ingredients separately.
5. Combine wet and dry mixtures.
6. Fold in blueberries gently.
7. Chill dough 30 minutes.
8. Roll into balls and coat in sugar.
9. Bake at 350°F for 11-13 minutes.
10. Cool and serve.
Notes
Chill longer for thicker cookies.
Use fresh blueberries for best texture.
