A soft and fluffy lemon blueberry cake layered with rich cream cheese frosting, bursting with fresh lemon zest and juicy blueberries.
Ingredients
3 1/8 cups cake flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup unsalted butter, softened
1 3/4 cups granulated sugar
4 large eggs
2 tsp vanilla extract
1/3 cup fresh lemon juice
2 tbsp lemon zest
3/4 cup buttermilk
2 cups blueberries
20 oz brick-style cream cheese
1 1/4 cup unsalted butter
7 1/2 cups powdered sugar
2 1/2 tsp lemon juice
2 tbsp whipping cream
Instructions
1. Preheat oven to 350°F and prepare cake pans.
2. Whisk dry ingredients together.
3. Cream butter and sugar until fluffy.
4. Add eggs one at a time, then add vanilla, lemon juice, and zest.
5. Alternate dry ingredients and buttermilk.
6. Fold in blueberries.
7. Bake 30-35 minutes and cool completely.
8. Beat frosting ingredients until smooth and frost cake.
Notes
Use room temperature ingredients for best texture.
Coat blueberries with flour before folding into batter.
